Egg Roll in a Bowl

Ingredients

  • 1 to 2 tablespoons olive or vegetable oil
  • 1 pound ground pork, lean ground beef, or ground turkey
  • 1 medium yellow onion, diced
  • 1½ teaspoons kosher salt, divided
  • Black pepper, to taste
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 (14-ounce) bag coleslaw mix
  • 2 tablespoons soy sauce or tamari
  • 2 medium green onions, thinly sliced
  • 2 teaspoons rice vinegar
  • 1 teaspoon of toasted sesame oil
  • Optional toppings: sriracha, chili crisp, or sweet chili sauce

Instructions

  1. Heat oil in a large skillet or wok over medium-high heat. Add ground meat and diced onion. Season with 1 teaspoon salt and pepper. Cook until meat is cooked through and onion is tender, about 8 minutes.
  2. Stir in garlic and ginger and cook until fragrant, about 30 seconds.
  3. Add coleslaw mix, soy sauce, and remaining salt. Cook for 2 to 3 minutes, stirring occasionally, until vegetables are crisp-tender.
  4. Remove from heat and stir in green onions, rice vinegar, and sesame oil. Taste and adjust seasoning as needed. Serve warm with optional toppings.
